Liquid Lunch

There is NO way a fast food meal, or some processed snack foods could give me the energy and nutrition I need to fuel me for my long days. My body would be like "what the f**K and I supposed to do with this?" I wouldn't be able to function at my best. So thats why smoothies are a great way for me to have a nutrition packed meal thats portable and I can whip it up in 5 and head out the door to take on the day. BUT not all smoothies are created equal. Im not talking a "Razzmatazz" from Jamba. Its all just sugary fruit juice blended with more frozen fruit and sorbet!!! Ummm no nutritional value there.

This smoothie is packed full of protein, healthy fats, greens, fiber, and natural sweetness! I can literally have a smoothie like this at 2:30-ish and it will keep me full and happy until right around 7 when Im coming home from class and ready to have din. Annnddddd yes this is one of those healthy smoothies but it actually taste super yummy. So here are my smoothie MUST HAVE'S:

-Greens (I prefer fresh spinach or kale)
-Protein ( I am not a fan of the whey or soy proteins out there so Ive found a totally natural and vegetarian source of protein powder, Garden of Life raw& fit protein. Its all raw, organic and made with no synthetic chemicals or crap like that. It's made with a blend of brown rice protein, quinoa protein, flax meal, lentil sprout, amaranth sprout, chia seeds and so much more goodies! Hemps seeds are also a great source!) I love Sun warrior protein or Garden of life is another great option.
-Fats Almond butter, coconut oil, avocado, cacao nibs, and hemp seeds are great choices. 
-Low sugar fruits ( I prefer wild blueberries and raspberries and I will use bananas too but only if they are still slightly green because thats when they have very little sugar and lots of fiber, versus when they start to brown and get super sugary)
-Crunch ( I love throwing in at the last minute some raw cacao nibs, hemp seeds or a little bit of almonds or any nut. Just to add a little texture and crunch.
-Almond or coconut milk (the unsweetened vanilla variety are my favs)

BulletProof

So there is this coffee that I'm currently obsessed with. BulletProof!! It is a combination of coffee, grass fed organic butter, organic raw un-refined coconut oil and grass-fed, pasture raised whole milk. Sounds super weird I know. Butter+coconut oil in your coffee? What? But it = heaven in a cup!

Okay so butter is not bad for you? I thought butter makes you fat? NO! Some people still seem to be afraid of fat. Fat is necessary to help our bodies burn the cellulite fat we all want gone! The kind of fat that helps this is the healthy omega fats. From things like, avocados, nuts, coconut and olive oils, to yes, BUTTER. But only if its the good grass fed kind of butter. I always use Kerrygold unsalted butter to make my bulletproofs, and to cook and bake with because its the best!. Buying "fats" that are grass fed ensures that the fat is the healthy kind and it will not increase your bad levels of cholesterol but instead optimizes them! The coconut oil does the same thing and gives the coffee a delicious coconut aroma and taste. By starting your day with healthy fat you are basically pushing the start button on your bodies metabolism to burn fat the rest of the day!

I use a milk frother to make my bulletproofs and I totally recommend buying one. They have hand helds for 14.99!! It changes the consistency of the coffee to be this amaze drink. Creamy, buttery, coconutty, just freaking delish! I can drink one of these in the morning with some fruit and be full for hours AND they give me crazy amounts of energy. But not like the jittery, bouncing off the walls, I feel cracked out kind of energy. A sustained, I feel like I could run a marathon, I can conquer the world kind of energy.

                             Basic Breakfast

This is my go to breakfast when I need to eat and run. It has everything my body wants in the morning. Protein, healthy fats and greens :)
- 3 whole eggs, with yolks, scrambled. (Pasture-raised eggs), half an ago, some sautéed kale with olive oil and red pepper flakes, and of course some organic green tea.

* Buying pasture-raised eggs is the top quality you can buy, better than free range. Free range just means they aren't in a cage, but they are not eating healthy food. And not eating healthy food=bad egg yolks=full of bad cholesterol.

Fresh Salmon with carrot-ginger slaw

For starters I am IN love with this dish, but more importantly IN love with its healthy benefits!  I'm talking Healthy fats people! Salmon is full of heart healthy fats and Omega 3's! And no, eating fat will not make you fat if its the good stuff you're eating.

The star of this dish is the Salmon obviously, so I was on a quest to get a really great piece of fish, and I'm sorry but not even Sprouts could help me on this one, Whole Foods maybe...I knew I wanted fresh, wild-caught fish, that was not farm raised and not "previously frozen" so I headed over to the local fish shop/restaurant called Pacific Beach Fish Shop and bought 15 oz of fresh Atlantic Salmon. And let me tell you, when you get really good quality meat,it makes a huge difference and is definitely noticeable.

Raw carrot and lentil salad with truffle oil.

Let me just say that this salad is so good! It is not your usual salad of lettuce but it is something new, delicious and worth trying! It is so cheap and easy to make because 1. all the ingredients are vegetables that cost around 99 cents, and 2. you don't actually have to cook any of them! All the veggies are raw, excluding the steamed lentils but those are a legume so they don't count ;)

I saw a picture of this salad on Pinterest ( I know, I'm obsessed) but it was in french so I couldn't read or understand the recipe. But I caught the gist of it and went with it! And it turned out great! The lentils are the only part to this salad that are not raw,but i'm okay with that! You can totally make your own sprouted lentils if you so choose...but that was too much work for me ha ha.

Rice and Beans with Raw Salsa Luz

If you are thinking "Rice and Beans?" really? that is about as boring as you could get!...boy are you mistaken. The Luczynski family has impressed me yet again with one of their "go-to" meals. It is the salsa that makes this plain dish outstanding! And it is ridiculously easy.

The salsa is mix of fresh, raw peppers, onions and jalepeno mixed with apple cider vinegar and olive oil! Just be sure to make it a few hours ahead so it can really soak up all the flavors and marry.
